Pale yellow with a classic sauvignon green tinge, highly floral nose, and multi-layered white flowers and fruit complexity. Ample, long, fresh finish. An absolute treat, and the benchmark for a high quality Sancerre. Will pair with excellently with white fish and seafood, although we love it all on its own.
About the producer: Pascal Thomas is not only one of Sancerre’s most respected growers, his method of farming his tiny plots on the steep hillsides allow him to select his wines by plot and to ensure that his wine is a long-standing favourite of both locals and connoisseurs. His ‘tradition’ is grown exclusively on 40-year-old vines on a chalky soil, which gives the finished wine enormous elegance and balance. Entirely traditional methods of agriculture including hand harvesting, traditional filtration and no oak. Only 25,000 bottles produced each year.
