The Progetto Calcarius Hellen organic red wine is made using spontaneous alcoholic fermentation without temperature control. It has grassy minerality on the nose, like many natural wines but doesn't fall short on the palate and with excellent balance, not too effervescent, fruity, slightly dry with great acidity for what it is.
