30 year old vines from a myriad of soil profiles and microclimates. Fruit is hand harvested and vinified separately. The wine rests on the lees for 8 months before blending, followed by additional 12 month elevage. Bottled unfiltered and unfined.

About the producer: Achillée is French for Yarrow and is a reflection of the winery’s close connection with the land and with biodynamics. Run by the Dietrich family, they have been growing grapes organically since 1999 and biodynamically since 2003. The wine is produced in – as they proudly proclaim – the largest straw building in Europe, and there is minimal intervention in the production process.
